Melt butter in a saucepan, pour in egg mixture and stir until egg is set. Note: Scrambled eggs add needed protein and most kids love them. Try the following additions: cottage cheese, grated cheese, finely chopped leftover cooked vegetables, grated apple, chopped parsley, or mashed tomato with skin removed.
Heat gently until sugar dissolves, then bring mixture to the boil. Boil briskly for 5 minutes. Remove from heat and add lemon juice and mint leaves. Leave mixture to infuse for 15 minutes. Strain into a clean shallow dish. Place in the freezer and allow to partially freeze (3–4 hours). Remove dish from freezer and break icy pieces into flakes with a fork. Return to freezer. Repeat the breaking up process several times until the mixture has the consistency of loose ice crystals. Beat egg white until it holds its shape then fold into granita.
